6 Steps to a Delicious Treat

1. Preheat Oven
Pre-heat your oven to 180C. Butter two cake tins (2 x 20cm) & line with baking parchment.

2. BREW THE COFFEE
Brew 100ml of a strong CafePod coffee of your choice. Any brewing method will work. Pod Machine, Cafetiere, Moka Pot, it's up to you.

3. MAKE THE SPONGE
Beat the butter, flour, sugar, baking powder, eggs, vanilla & half of the reserved coffee in a large bowl with an electric whisk. Fold in the finely chopped walnuts.

4. Bake
Divide the mixture between the two tins. Scatter the roughly chopped walnuts over one of the cakes. Bake the two cakes for 25-30 mins until golden.

5. COOL THE CAKE
Drizzle 20ml of the reserved coffee over the plain cake half. Cool the cakes in the tins.

6. FINISHING TOUCHES  
To make the filling, beat together the icing sugar, cream & mascarpone, then fold in the remaining coffee. Spread over the plain cake, then cover with the walnut-topped cake. Serve and enjoy!
